Small Potatoes Catering Chef and Assistant Chef

Small Potatoes Catering is a professional food catering company established by Becky Watts in 2001. Becky holds a certificate in Hotel and Restaurant Management, specializing in Culinary Arts. International travel and residence in the UK and Canada contribute to developing an expertise in gourmet and classic cuisine.

Becky stays current with food trends and innovative presentation through participation in local cooking events, professional catering conventions, and food shows. Recent continuing education opportunities included travel and culinary classes in the southwest region of France and a food and wine tour with Chef Kent Rathbun to the Catalonian region of Spain. (In June, 2011, Becky traveled to Boston and Cape Cod for a "Boston Tea Party" tour with friend and tea connoisseur, Margie Wilkov of Margie's Tea Service. The trip was featured in the September/October, 2011 issue of Tea in Texas magazine.)

Becky's newest venture is the production of SPC Gourmet sorbets and Shortbread. The sorbets feature innovative flavors made with all natural ingredients, fresh fruit, and herbal infusions. No dairy products are used. The shortbreads are developed from the traditional 5 ingredient recipes - flour, sugar, butter, salt, and flavoring - but with the additional of citrus and spices.

The combination of sorbet and shortbread makes a classic light dessert and a great addition to tea menus.

Becky is a long time member of the Herb Society of America. The exposure and education concerning the culinary use of herbs by the organization has been a huge influence in the development of the menus offered to clients. Becky has been a guest presenter numerous times for the organization, demonstrating and offering "tasting menus" featuring herbal recipes and teas. In spite of a very full schedule, Becky still finds time to maintain a small herb garden and offers seasonal garden tours and herbal luncheons.

Small Potatoes Catering actively supports community volunteer opportunities. Becky is a former chairperson of the Hospitality Committee of the Plano Symphony Orchestra and remains an active volunteer. Support to charitable organizations include: Hannah's Horseshoes of Hope (therapeutic horseback riding), food drives for McKinney's Title 1 Schools, and numerous church sponsored events.

All food is prepared in our commercial kitchen in compliance with the requirements of the Texas Department of Health. We carry liability insurance. Our sorbets are permitted by license with the Frozen Desserts Division of the Texas Department of Health.
